A new café has opened its doors this week in the heart of Miami Springs, offering more than just coffee — it’s serving up a full experience for locals and visitors alike. Café Colibrí, located at the corner of Westward Drive and Curtiss Parkway, is already making waves with its cozy vibe and locally inspired flavors.

“We wanted to create a space where people could gather, work, or simply relax with a great cup of Cuban coffee or a handcrafted latte,” said Sofía Martinez, the café’s co-founder.
Since its grand opening on Monday, Café Colibrí has seen a steady stream of customers — particularly those drawn in by its signature guava-and-cheese croissant and almond foam café con leche. The interior blends vintage décor with local artwork, offering free Wi-Fi and plenty of comfy seating for meetings or study sessions.
The café also plans to partner with the local high school to provide internship opportunities for students interested in business and hospitality.
The launch of Café Colibrí is just one of many signs that the Miami Springs business district is on the rise, as more small businesses continue to invest in the community.
